I tried this solution with iphone 3gs firmware 3.1.2 and got only 12 pages 1 page more. I tried getting the 13th page but cannot.
Also tried it with iphone firmware 2g firmware 3.0 and it crash! But after reboot, I got 12 pages. That is also the maximum I can get. If someone gets 13th page, do let me know how you did it as I tried the same steps mentioned and I only got 12 pages.

I did manage to get it up to 19 pages and it kept those 19 pages even after a device restart as well as an iTunes sync. However, some days later, it went back to 11 pages after an iTunes sync (I think). I am not sure what triggered the reset as it was stable mostly.

This method works fine with the iPod Touch as well. I have a 2nd gen iPod Touch w/ the latest software and I have the voice memo app.
I did this a while back and had 14+ pages, only problem was, as soon as they added the app organizer to iTunes, when I synced my iPod that blew away my extra pages.

Since I am often syncing to install adhoc builds of apps, it just wasn't practical for me to keep re-doing this everytime, so I stopped bothering, and now I just use the spotlight search to find stuff.

That's a cool fix, free game apps and useless novelty apps clutter my iTouch up until it's not funny.
