I played Ultima 6.7. and 8 recently again (well, about 2 years ago, but my memory is still fresh) and I don't think they would work so well on the iPhone without changing too much. But in general a RPG as deep as Ultima would be incredible. Especially if it had the same "vibe" to it.
Populous and Powermonger might work, but would need some adjustments. But do you remember Mega-Lo-Maniac? This would be perfect on the iDevice. As well as the old BlueByte strategy games BattleIsle and Historyline.
There was some talk about a iPHone port of Scribblenauts for the iPhone after some obscure dev post on their facebook page. But i haven't heared anything about that since then.
More Makeovers of LA Clasics would be great. And I'm sure they're on the way.
I'd love to see the 5th Cell's Nintendo DS game Scribblenauts be ported to the iPhone/iPod Touch. I have no idea if there are any licensing issues, but if Rockstar can do it w/ GTA Chinatown Wars, then I can't see why this cannot be done as well. I don't have a DS, but really would like to play this game. I think the iDevice is the perfect platform for such a game and the online distribution allows for the dev to add new content easily through software updates or DLC.

I have ScummVM on my MacBook and love it! I do know about it's support for iPhone and have been tempted to jailbreak, but I like the OS updates. That, and I have some crazy fear in my head that I might accidentally do something crazy to my iPhone if given that much power.
(I'm also hoping that if Lucasarts releases these on iPhone that they will beef up the old games like they did to the original Secret of Monkey Island. Much like how Beneath A Steel Sky got "remastered")
I would like to see Grand Turismo 5! Since there already is a PSP version it shouldn't be too hard...
Hopefully the c64 emulator on the appstore will bring a few of my old favorites to life! Frantic Freddy (my very first video game -not counting the knock-off pong machine we had!), Giana Sisters, Montezuma's Revenge....
Man, I hate it when I hit the wrong button! Anyway, here's attempt #2 at a post. I would love to see any of the following on the C64 emulator, though I doubt they'll make it for legal reasons:
