I gathered that the most best microphone for iPhone touch is the Griffin Smart Talk

But griffin products are hard to find online. Anyone know of a reliable web site to purchase them?

You know, I use ones included in my headphones - all of the following have decent microphones which also allow you alone to hear the voice call:
Nuforce NE7M (http://www.touchmyapps.com/2009/03/17/nuforce-ne7m-earphones-and-mic-new-kings-on-the-block/)
Phonak Audio 121 (http://www.touchmyapps.com/2009/04/04/phonak-audeo-121-and-112-iphone-compatible-inner-earphones-in-review)
Maximi iP-HS5 (http://www.touchmyapps.com/2009/12/13/maximo-ip-hs5-headset-in-review/)
Zagg Z-buds (http://www.touchmyapps.com/2009/03/11/zagg-z-buds-in-review/)
The nuforce at 50$ represents the best price/performance ratio and is an excellent earphone. Otherwise, I would recommend the Maximo, but its cable is pretty ... weak. The Phonak is also very good. The Zagg is pretty poor sounding in comparison and has the same sort of horrid cable as the Maximo.
I am happy with the $10 Phillips #SHH1610 if you can find it still.

Do you have to have at least a 2nd gen ipod touch to use a mic with it?

I think so - the old one doesn't have mic pinouts in the headphone jack except for the Dock port.

I just got off the phone with the guy in electronics at a Store in Portland. After calling the first time and being told they didn't carry such a thing, I called back with the DPCI, and they looked it up and lo and behold they have 4. Only this is where i am confused, the guy tried telling me that it isn't really a microphone at all, it just extends your headphones. And same price, $9.99. He said that for some reason their system has it as a "Microphone".

It's got the mic if it is still built like mine. Check out the thread in Rec/Edit section for a better description. :)
